Generate Kitchen Prep Sheets

A prep sheet tells the kitchen how much of each ingredient to prepare for a service day, based on a forecast of how many portions of each dish you'll sell.

Generate a sheet

  1. Go to Restaurant → Prep Sheets.
  2. Pick the service date.
  3. (Optional) Enter an expected number of covers to forecast by covers instead of by date.
  4. Generate for an on-screen preview, or Download PDF for a printable landscape sheet.

How the forecast works

  • By date (default) — each dish's portions forecast from a 4-week rolling average of the same weekday's actual POS sales. A sheet for a Friday averages the last four Fridays that had posted sales. It's a plain sales average, not a black-box prediction, and the method is stated on the sheet.
  • By covers — your expected cover count is distributed across the menu using the same 4-week same-weekday sales pattern.
  • For each dish, forecast portions multiply through each ingredient's quantity and waste %, giving a prep quantity (rounded to one decimal), costed at the item's live average cost, grouped by category.

Dishes with no sales history simply forecast zero — never an error.

Reading the sheet

Per category: each recipe and its forecast portions, then each ingredient with prep quantity, UoM, estimated cost, and a blank Actual column for the kitchen to tick off. A total estimated ingredient cost sits at the foot.
